The best oat flour white sauce


Eating clean is something that takes time week 1 you majorly amped but just before the 21 day mark you close to calling quits. 

While yes I don't take things totally off my list I do try to find a healthier alternative and that helps. I never like being deprived from anything. I'm a Taurus, comfort, luxury and indulgence is my DNA. So my question to myself was how on earth can I enjoy the comfort of pasta smothered in white sauce....

While making my own oat flour for my pancakes it dawned on me lets just see what will actually happen if I treat it as a bechamel sauce, oat flour a dollop of butter and coconut milk. 

The end result was amazing.

As you an see I didn't title this post as a bechamel sauce because it's not and I add spices, garlic and honey. It's my perfect combination for my taste. However you can forgo all the extras and season however you like the base of the sauce is there for you to add your personal touch.


White sauce:

  • 1/2 cup milk of choice, dairy free or not . 
  • 1/4 cup oat flour 
  • Tiny knob of butter. 
  • Black pepper
  • Salt

Optional ingredients :

  • Nutmeg
  • Cayenne pepper (tiny bit goes a long way) 
  • Garlic
  • Cheese
  • Cinnamon 
  • Dried basil 

As you can see be creative and find what works for you as far as seasoning goes. 

Method :

  1. Add nob of butter to pan and let it melt 
  2. Once melted add your oat flour and combine 
  3. Add Milk 
  4. The consistency should be gravy like if it's not add more milk to thin it or oat flour to thicken it. 
  5. Season as desired.

The idea behind this is to create something healthier so you never feel deprived like ever. Add this sauce over chicken, steak or as I enjoy it over whole wheat pasta.

2 minute caramel sauce



So today I woke up craving crepes covered in caramel sauce... (First world problems in a 3rd world country haha). But this is usually how all my experimenting begins, it starts with a serious craving!!!. So I decided to use the ingredients I had on hand and 2 ingredients later and 2 minutes later my sweet craving was satisfied.

As with anything in life if you want to be a "I can cook like a boss" lady it all starts with perfecting the basics.

Chia and chocolate pudding


Now I have been itching to get my hands on chia seeds for so long. Finally Dischem stocks them and a little really does go a long way. I made this dessert for the family the other day. We were craving a sweet treat and I kinda thought why not, I had chia pudding setting in the fridge. This might just be really the easiest desserts you can make and one that people believe you took forever to whip it up. Its really simple and super healthy too. The only thing that is time consuming is waiting for the chia pudding to set. It needs to set overnight, so get on that first. On that topic i'm about to eat some chia pudding while going through my emails.

"Chocolate mousse cake"


Yip you read that correctly, my entire title is in inverted commas because truth is there is no flour, sugar, butter in this cake. When I tell you it's whipped up in a blender and bakes in 20 minutes you wouldn't believe that either, but it is exactly just that! The dream cake for my clean eating fitfam.

Healthy 3 ingredient Chocolate Mousse!


I know you have been waiting for this recipe patiently after seeing my instagram posts... but trust me it was all about making sure everyone loved it as much as me. I knew the perfect test would be giving it to people who did not enjoy healthy treats. I lied and said "choc mousse anyone?" and the "yes please hit me up" replies followed. It was only at the end when  I inquired if they enjoyed the taste etc. that I mentioned it contained no cream, no milk and only 3 healthy ingredients. No one believed me. The taste is really so "chocolaty" you will melt with joy.  Just FYI you can set it a bit longer and turn it into ice-cream. You can read the full details of that recipe here.

Whenever I think of mangoes I go to a place of Caribbean islands, Brazilian jazz music in the background and the whooshing sound of the ocean dancing to the rhythm of the day. Pure happiness.

Speculoos cupcakes with vanilla glaze


Can we take a minute to appreciate the wonderfulness which is Speculoos cookie spread please. Most know it as a cookie spread, I know it because Bart introduced me to it and my life will never be the same. 

One thing about being in Europe was finding unique things I wouldn't get here in South Africa. On my bike trip to Holland  (which you can read about here, first time biking ever etc.) we stumbled upon a great store where I finally got my hands on some Speculoos spice. It's like gold in my life at the moment.

Last week I posted a delicious German pancake and as good as it was I know eating that daily for breakfast wont work (for the waistline). So why not feel like you eating a treat with  a healthier twist. Many fitness gurus believe in oatmeal for breakfast. So why not make oatmeal pancakes. These pancakes literally have three main ingredients. Seriously what is better than that?

German pancakes



Having my girls over for breakfast is always a treat. It's a chance to try that new recipe, a moment to catch up and often the most therapeutic time ever, I mean who needs a shrink if you have great women surrounding you making you laugh till your tummy aches?. Today that's exactly what my morning started like. 

I have always been so curious about what's the difference between Dutch baby pancakes or German pancakes compared to the usual way I make it. I was pleasantly surprised it has a kind of milk tart affect. Which was perfect because it just happens to be my sisters favorite dessert. So this will definitely be added to my go to breakfast recipes when she comes around.

Weekend Reading | Meghan Silva Blog

Its really a grey and gloomy day here in Johannesburg, so why not keep warm with a cup jo and some good reading. With that said I have really been enjoying finding new posts, tips, recipes and so forth to add to my midweek or weekend reading. Can I make a confession? I often use them to save posts I want to keep for future use. Who doesn't love learning, right? This week's been busy but great. Do I need a little break oh yes I do... Mid week reading


Oh hello August, for me August has its perks, for instance its my sisters birthday month meaning celebrations and a teeny weeny chance we might get a little snow. With that said I also dread August because it happens to be the coldest month here in South Africa and me no likey the cold. Thankfully it has been pretty pleasant. Anyway before I keep rambling on and on about the weather,I am sorry and well aware my recent posts have mostly been sharing links to posts I have enjoyed. But I really have been busy and want to get back in the blogging groove so I hope you don't mind it to much. I do hope you having a wonderful week, if not stay positive and remember that if things are good do everything you can to enjoy and value it because things change so quickly and if they not going well, keep strong because every breakdown is followed with a breakthrough. I love juicing!


Juicing is my new vice, I love how I can get my vege fix without actually having to pig out on vegetables. I am not a vegetable fan just in case you haven't picked up on that. Recently I made these two juices one to help cure a nasty hangover and one as a general juice I have been loving. Advice to newbie juicers everything tastes better when its chilled.

Guilt free chocolate cupcakes


Its been a pretty minute since I have posted. With internet issues being the main culprit truth be told I was getting a bit bored with what I was posting. Yip I said it! So I thought nope pause a bit and post something real good. Which is where these guilt free cupcakes come in. It really feeds the desire to have something dessert like but without the next day calorie guilt trip. I had one person saying (while enjoying their first bite) this is sooooo rich. I waited a few minutes before saying this is actually protein and flax seed cupcakes. The look on their faces was priceless!
