Whenever I think of mangoes I go to a place of Caribbean islands, Brazilian jazz music in the background and the whooshing sound of the ocean dancing to the rhythm of the day. Pure happiness.
It's mango season in South Africa and with this gorgeous piece of fruit I decided why not add a twist to my regular chicken salad.
- I cut the chicken in cubes and browned it in some peri peri marinade along with a dash of garlic and added some mushroom for some added flavor. Oh how I love mushrooms.
- Once done I put it aside to cool down.
- The star of this dish can be cut in many variations but I decide to simply slice and cube it.
- The greens of choice was rocket salad, butter lettuce and it was divine. Now the only thing missing is a piña colada and sand between my toes.
