All you smell is a scent of amazing food being prepared coming from the kitchen, fryer is going , Cesaria Evora playing in the back ground my brother busy whipping up something scrumptious and that amazing scent of fresh prawns ...
on the menu for breakfast this morning is Prawn tampura on a bed of rockets lettuce and herbs with sweet chilli sauce and some lemon juice
prawns
half tsp baking powder
1 cup flour
1 egg
pinch of salt
1 cup ice cold water, sparkling water works well too
white pepper & ginger spice too season
directions
mixed all the ingredients together besides the prawns,white pepper and ginger, lumps are fine, make sure not too over work the batter,set your deep fryer to high he went right up to 190 degrees with the deep fryer,make sure to de-vein & de-shell the prawns ,dry prawns carefully, then season the prawns with white pepper and a pinch of ginger,dip the seasoned prawns into batter and gently place the prawns into fryer.
Handle with care. Wait till the prawns reach a golden brown color place them on kitchen towels to drain some of the oil
and you are done ...
Serving suggestions:
serve on a bed of lettuce, rockets &herbs, add a wedge of lemon if you wish and lightly drizzle with sweet chilli sauce ..
