Keep calm and bake a cupcake

Recently I offered to make 40 cupcakes for my niece's 5th birthday(ended up being 57)... with the heat wave it was quite the mission not that I'm complaining, I love baking and so does my mom who taught me everything I know, needless to say the 2 of us did it pretty quickly. The recipe is made in huge batches so you easily can make 40 small cupcakes we like them a bit bigger so we made 2 batches and had a lot left over for my loved ones to enjoy. Keep in mind this recipe will come in handy if you need to make a lot of cupcakes.





Ingredients (1batch)
  • 250g margarine
  • 5eggs
  • cup sugar
  • 3cups cake flour
  • 6tsp baking powder
  • 1cup water
  • 2tsp vanilla essence



Firstly preheat oven on 180



  1. Separate eggs
  2. Mix the margarine, sugar,egg yolks and vanilla essence.
  3. Sift the flour and baking powder into mixture above,
  4. Add cup water ,mix it together.
  5. Beat egg whites till its stiff and fold it into the batter
  6. Bake for 13/15 minutes



frosting
  • 250g margarine
  • 500 gram icing sugar
  • food coloring of choice
  • mix it all together and if you wanna make it like mine above you will need a piping bag and a nozzle .
