Recently I offered to make 40 cupcakes for my niece's 5th birthday(ended up being 57)... with the heat wave it was quite the mission not that I'm complaining, I love baking and so does my mom who taught me everything I know, needless to say the 2 of us did it pretty quickly. The recipe is made in huge batches so you easily can make 40 small cupcakes we like them a bit bigger so we made 2 batches and had a lot left over for my loved ones to enjoy. Keep in mind this recipe will come in handy if you need to make a lot of cupcakes. 
 
Ingredients (1batch)  
-  250g margarine
 -  5eggs
 -  cup sugar
 -  3cups cake flour
 -  6tsp baking powder
 -  1cup water
 -  2tsp vanilla essence
 
Firstly preheat oven on 180
 -  Separate eggs
 -  Mix the margarine, sugar,egg yolks and vanilla essence.
 -  Sift the flour and baking powder into mixture above,
 -  Add cup water ,mix it together.
 -  Beat egg whites till its stiff and fold it into the batter
 -  Bake for 13/15 minutes
 
frosting  
-  250g margarine
 -  500 gram icing sugar
 -  food coloring of choice
 -  mix it all together and if you wanna make it like mine above you will need a piping bag and a nozzle .
